Nutmeg, also known as nutmeg, is an evergreen tree that grows in the tropics. Nutmeg and flower appeared in Europe in the 8th century. The places of origin of nutmeg are the Moluccas, their eastern part, the islands of Indonesia (Java, Kalimantan, Sumatra). It also grows in the tropics of Brazil, West India, and Africa. Description An adult nutmeg tree lives up to 100 years and reaches 20 meters, the flowering period is round the clock. Nutmeg has a large crown in the shape of a pyramid. The nutmeg berry looks like an apricot, and after ripening it opens. The seeds ripen after the opening of the berry. Nutmeg seeds are contained in the epididymis. The number of fruits from one tree can reach up to 2000 berries. Cultivation Nutmeg is grown on plantations in tropical areas. The achene is dried, ground, crushed and becomes golden yellow. Nutmeg looks like a fragile horn plate 3-4 microns long, 2-3 microns wide and microns thick. The plate of the mat is hard and slightly translucent. Penang and Bandan nutmeg are considered the most valuable on the world market. Nutmegs are freed from the seed and dried over a wood fire until the nutmeg acquires a brown color. After that, the nutmeg is placed in milk of lime and dried completely. The resulting white coating protects the nutmeg from mold.

Nutmeg in the shell is called nutmeg. The finished nut is an elongated kernel 2-3 cm long and 1.5-2 cm wide, brown in color with a gray tint and a beige mesh. On one side of the nutmeg there is a light spot, on the other - cinnamon or black. Chemical composition Nutmeg and its flower contain a large amount of essential oils. The composition of essential oils includes pinene, augenol, dipentene, geraniol, linalool, camphene. Nutmeg also contains fatty oils, pectin, dyes and starch. 

Composition: 10% essential oil, 40% fatty oil, starch, protein. Trimystin, organic acids are contained in the oil of the fruit. 

Nutmeg application in medicine

The narcotic properties of nutmeg are also known. There is evidence that 3-4 crushed nutmeg fruits have an effect due to the fact that it contains natural amphetamine. Nutmeg contains methylenedioxide-substituted compounds, such as: myristicin, elemicin and safrole. These and other aromatic fractions synergistically combine to create a psychotropic effect. In large doses, the use of nutmeg can cause tachycardia, euphoria, hallucinations, nausea, vomiting. It should be used carefully, however, like all spices, due to their strong effect on the human body

• Pain-relieving effect 

• Cures chronic rhinitis

• Promotes the treatment of peptic ulcer disease of the stomach and duodenum, causing a psychotropic, tranquilizing and antimicrobial effect at the same time. 

Nutmeg is a good remedy for the treatment of varicose veins. The course lasts 2-4 weeks. Pour 1/2 teaspoon of the powder with a glass of boiling water, wait until it cools, then add 1 tablespoon of honey (do not add honey to boiling water, because it loses its healing properties). The drink should be infused for 20 minutes. This drink should be drunk half an hour before breakfast every day. Then it has a tonic effect, if it is drunk in the evening, then 2 hours after the last meal. In this case, it acts as a hypnotic. 

Usage in cooking

Muscat has a spicy smell, it has an aftertaste - at first the taste is weak, and then it becomes pronounced. Nutmeg is not recommended to be used in large quantities. In cooking, it is widely used for the preparation of puddings, creams, sweets, baking, compotes, boiled. Nutmeg is used for baking fruit. Some gourmets add nutmeg to soups, broths, pates, vegetables, schnitzels. Nutmeg is added to alcoholic drinks and aperitifs for their flavoring, to tomato juice, milk drinks, hot lemonade, mulled wine, punch, cocoa. Nutmeg is used in the preparation of charlottes, fruit cakes, ice cream, and whipped cream. Nutmeg is actively used in the preparation of meat broths, soups, rice, cauliflower and Brussels sprouts, fish, poultry, meat, vegetable salads, and tomato sauce. 

Muscat color is suitable for the same dishes. But it is not used for cooking mushrooms and macaroni. And nutmeg is more widely used for sauces than nutmeg. But traditional French cuisine uses nutmeg in sauces more often than the color. Nutmeg is more expensive than nutmeg. At the beginning of the 19th century, it cost four times more than a walnut. Today, nutmeg is not so widely distributed.
