Dill is one of the most popular spicy plants that grow in our country and are widely used for culinary purposes. Spicy grass has a pleasant refreshing taste and rich aroma. Moreover, both experienced cooks and housewives add dill to almost all dishes, with the exception of sweet desserts. The subtle aroma of spices adds exclusivity to quite ordinary dishes, without it, borschts and soups, cold appetizers and salads, stewed vegetables, meat or fish, various casseroles, sauces, etc. are almost unthinkable. For many centuries of using dill in cooking, people have appreciated its taste characteristics, useful properties, and aesthetic qualities that allow the fluffy sprigs of dill to serve as a wonderful decoration.

Cooks prefer to use fresh herbs, but dried dill is no less popular and is used as a strong flavoring. Even a small pinch of dry grass gives the dish a unique aroma and a faint anise aftertaste. This property of the spice is especially relevant when preparing all sorts of hot soups, poultry, meat, fish, mushrooms, sauces and gravies.

However, when using dried dill for culinary purposes, do not forget that, like any other spice, it can be added only in small quantities. If you do not follow this rule, even the most exquisite dish can be spoiled by an excessively rich aroma and taste.

In addition to fresh and dried dill greens, dried seeds of the plant are also used in cooking. It is mainly used in canning vegetables and fruits, as well as as a natural flavoring for bites.

To obtain high-quality dried dill, it is recommended to cut the grass before the beginning of the flowering period, while the thin leaves are still juicy and tender enough. Dill seeds for preparation should be collected when they acquire a slightly brownish color. After that, the seeds and finely chopped dill should be scattered in a thin layer on a large plate or tray and put in a dry place with good air circulation until completely dried.

In addition, dill has long been known to mankind as a very useful plant that helps the body cope with various diseases and significantly replenishes the supply of vitamins and valuable elements. For example, scientists have established that the thin needle-like leaves of dill contain a considerable amount of carbohydrates, flavonoids, vitamins of various groups, as well as folic acid, potassium, phosphorus, iron, and calcium. For example, it has a beneficial effect on diabetes, obesity, salt deposition. Dill water is an excellent diuretic and cleansing agent, it is prescribed to young children, as well as people with hypertension and many other diseases.
